इक्षुरसगुडमधुफाणितजाम्बवपनसानामन्यतमो मेषशृङ्गीपिप्पलीक्वाथाभिषुतो मासिकः षाण्मासिकः सांवत्सरिको वा चिद्भिटोर्वारुकेक्षुकाण्डाम्रफलामलकावसुतः शुद्धो वा शुक्तवर्गः ॥ कZ_०२.१५.१७ ॥
ikṣurasaguḍamadhuphāṇitajāmbavapanasānām anyatamo meṣaśṛṅgīpippalīkvāthābhiṣuto māsikaḥ ṣāṇmāsikaḥ sāṃvatsariko vā cidbhiṭorvārukekṣukāṇḍāmraphalāmalakāvasutaḥ śuddho vā śuktavargaḥ
“酸/发酵类”(śukta-varga)包括:以甘蔗汁、粗糖(jaggery)、蜂蜜、糖蜜、jambu 果或菠萝蜜中的任一种酿制的发酵酒;并加入 meṣaśṛṅgī 与 pippalī 的煎剂浸渍;陈酿一月、六月或一年;以及由 cidbhiṭa、vāruka、甘蔗茎、芒果、余甘子(āmalaka)所得的醋/酸性发酵液,或由纯发酵所得者。
To standardize procurement, storage, and inspection: the state can classify items, price them, and verify quality by defined inputs and aging duration.
