दधि तक्रं काञ्जिकं च लकुचं चाम्लवे तसम् / अम्लो लोणः शुण्ठीयुक्तो जारणः पाचनो रसः
dadhi takraṃ kāñjikaṃ ca lakucaṃ cāmlave tasam / amlo loṇaḥ śuṇṭhīyukto jāraṇaḥ pācano rasaḥ
Sữa chua (dadhi), sữa bơ (takra), cháo lên men (kāñjika), quả lakuca và cây chua āmla-vetasa: đó là vị chua. Vị chua—nhất là khi hòa với muối và gừng khô (śuṇṭhī)—trở thành thứ dịch giúp tiêu hóa và trừ đầy hơi, như “nấu chín” thức ăn trong bụng.
